2 | Hot peppers - chopped | |
12 | Green peppers - chopped | |
2 | Green tomatoes - chopped | |
5 cups | 990g / 34oz | Sugar |
3 | Vinegar | |
12 | Red peppers - chopped | |
1 | Cabbage - chopped | |
12 | Onions - chopped (medium) | |
2 tablespoons | 30ml | Pickling spice |
Mix all vegetables with 1/2 cup salt. Let stand overnight: drain. Tie spices in a bag.
Add sugar and spices to vinegar, simmer 20 minutes.
Add all other ingredients and simmer until hot and well seasoned.
Do not overcook. Remove spice bag. Pack hot chow-chow in hot jars and seal at once.
