Chile Con Queso Mini-Bites Recipe - Cooking Index
1/2 cup | 31g / 1.1oz | Chopped tomato |
1/4 cup | 15g / 0.5oz | Minced green onions |
10 | Garlic minced | |
4 | Eggs beaten | |
1/2 cup | 118ml | Shredded cheddar - (2 oz.) |
1/2 cup | 118ml | Monterey jack - (2 oz.) |
Cheese with jalapeno pepper | ||
1 teaspoon | 5ml | Chili powder |
1/2 teaspoon | 2.5ml | Cumin - 1/8 t. Red pepper |
1 | Chopped green - (4 oz.) | |
Chiles rinsed and drained | ||
1 | Green chiles sliced |
Coat A Nonstick Skillet With Cooking Spray; Place Over Medium-High heat Until Hot. Add Tomato, Green Onions and Garlic. Saute Until Onions Are Tender. Combine Tomato Mixture, Eggs, Cheeses, Chili Powder, Cumin, Red pepper and Chopped Green Chiles. Stir Well.
Spoon 1 tbs of the mixture Into Miniature Muffin Pans Coated With Cooking Spray.
Bake At 425F for 8 To 10 Minutes. OR Until Centers Are Set. Remove From Oven; Let Cool in Pans 1 Minutes. Loosen Edges With Knife and Remove From Pans. Serve Warm. Garnish With Sliced Green Chiles If Desired.
