Chevre and Phyllo Kisses Recipe - Cooking Index
12 | Phyllo pastry | |
1 | Unsalted butter | |
4 oz | 113g | Montrachet or other soft mild goat cheese |
4 oz | 113g | Cream cheese - softened |
2 teaspoons | 10ml | Herbes de provence |
Salt and pepper to taste |
1. Preheat oven to 350F.
2. Working quickly, place 1 phyllo sheet on a flat surface and brush the entire surface with butter. Place the second sheet directly over the first and brush it with butter. Using a pizza cutter, cut the phyllo into 12 squares (4 rows of 3 squares).
3. In a small bowl, mix together softened cheeses, herbs and pepper
4. Place a tiny bit of the cheese mixture in the center of each square.
5. Gather the corners of each square and twist over the cheese to form a tiny kiss or purse. Place on a cookie sheet. Brush the tops of the kisses with butter. Repeat the process with the remaining ingredients.
6. Bake until crispy and golden, about 10 minutes.
Serve immediately.
NOTES : I sometimes use butter flavoured cooking spray to coat the kisses with before cooking-saves calories and time! If you make these very small they look delicate and go further.
