1/2 cup | 31g / 1.1oz | All-purpose flour |
1 teaspoon | 5ml | Baking powder |
3 cups | 438g / 15oz | Shredded Monterey jack cheese - (12 ounces) |
1 1/2 cups | 219g / 7.7oz | Cottage cheese - (12 ounces) |
1 | Chopped green chiles - drained |
Beat eggs in a large bowl until light, 4 to 5 minutes. Stir together flour and baking powder; add to eggs and mix well. Fold in jack cheese, cottage cheese and chiles.
Turn into an oiled 9" x 13" x 2" baking dish. Bake at 350F for 40 minutes. Remove from oven; let stand 10 minutes. Cut in small squares; serve hot.
Makes 3 to 4 dozen appetizers.
