Cashew Dipping Sauce Recipe - Cooking Index
1/4 lb | 113g / 4oz | Unsalted roasted cashews |
1 tablespoon | 15ml | Peanut oil |
3/4 cup | 177ml | Plain yogurt |
2 | Garlic cloves - minced | |
1 tablespoon | 15ml | Fresh lemon juice |
1 tablespoon | 15ml | Soy sauce |
Salt - to taste | ||
1/4 teaspoon | 1.3ml | Cayenne pepper - (optional) |
In a blender or food processor, combine the cashews and peanut oil. Mix until the two form a paste, periodically scraping down the sides.
Add in the remaining ingredients. Blend until smooth.
Dipping sauce may be made up to 4 days ahead of time if kept chilled and covered. Before serving, return sauce to room temperature.
Makes 1-1/2 cups
