Apricot Glazed Carrots Recipe - Cooking Index
4 cups | 440g / 15oz | Carrots - sliced |
3 tablespoons | 45ml | Butter - (or marg.), melted |
1/2 cup | 118ml | Arpicot preserves |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Orange rind - grated |
1/4 teaspoon | 1.3ml | Nutmeg - ground |
2 teaspoons | 10ml | Lemon juice |
Cook carrots until tender in enough salted water to cover (about 20 minutes); drain. Combine remaining ingredients, stirring until well blended. Spoon over carrots, and toss well. Serve at once.
