Apple Red Cabbage Recipe - Cooking Index

2 lbs | 908g / 32oz | Onion (medium) |
1/2 cup | 99g / 3.5oz | Butter |
1/4 cup | 49g / 1.7oz | Sugar |
3 cups | 438g / 15oz | Chopped apple (medium) |
1/3 cup | 78ml | Red wine vinegar |
1 1/2 teaspoons | 7.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1/2 teaspoon | 2.5ml | Ground ginger |

1/2 cup | 80g / 2.8oz | Raisins |
Cut the cabbage in half lengthwise and shred into thin strands. Discard core. Peel and chop onion fine. Melt butter or margarine in a 3-qut. casserole or browning dish. Add onions and heat, stirring often until yellowed, 2 minutes. Add sugar and stir until it begins to caramelize, 2-3 minutes. Add cabbage, apple, vinegar, salt pepper, ginger and cloves.
Cover and cook at FULL POWER 5 minutes. Add raisins and cook at FULL POWER until cabbage is crisp-tender, apples are cooked through and juices are reduced, 1-2 minutes.
