California Rillettes

Recipe Ingredients

2 tablespoons 30mlFlat-leaf parsley leaves
1 tablespoon 15mlFresh tarragon leaves
1   Red onion
1 cup 62g / 2.2ozCooked meat - (chicken, veal, beef or fish)
1 teaspoon 5mlLemon zest
1 teaspoon 5mlLemon juice
6 tablespoons 90mlUnsalted butter
1 teaspoon 5mlFine sea salt - or to taste
1 teaspoon 5mlFreshly ground black pepper - or to taste

Recipe Instructions

In a food processor or blender, process ingredients until finely pureed and well blended. Taste, adjust seasoning, pack into ramekins and chill. Serve with toast or crackers.
