5   Low-fat natural yogurt
  Salt and pepper
1   Garlic clove - peeled and
1   Cucumber - peeled and chopped
1 tablespoon 15mlFreshly chopped mint
1 tablespoon 15mlFreshly chopped parsley
  Extra chopped mint - to

Recipe Instructions

Drain off any liquid from the yogurt, place in a bowl and whisk until smooth.

Add the remaining ingredients, except garnish, and mix well. Turn into a serving bowl and chill for 30 minutes. Sprinkle with extract chopped mint to serve.
