Broccoli-Spinach Spread Recipe - Cooking Index
1/4 cup | 59ml | Extra-virgin olive oil |
1 teaspoon | 5ml | Whole cumin seeds |
1/2 teaspoon | 2.5ml | Crushed red pepper flakes |
2 tablespoons | 30ml | Fresh lime juice |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Black pepper |
1 lb | 454g / 16oz | Broccoli - cut into 1/4" |
1 | -- include stem | |
1/4 lb | 113g / 4oz | Fresh spinach |
1/2 cup | 118ml | Water |
2 tablespoons | 30ml | Grated coconut |
Heat oil in non-stick frying pan over medium-low heat.
Add cumin and pepper flakes and fry for 1/2 minute. Stir in lime juice, salt, pepper, vegetables and water.
Cover and simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally.
Immediately before serving, spread about 1 tbs of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.
