Zucchini With Fresh Herbs Recipe - Cooking Index
1/4 cup | 59ml | Vegetable stock |
1/3 cup | 20g / 0.7oz | Red onion - minced |
3 | Garlic cloves - minced | |
2 cups | 125g / 4.4oz | Tomatoes - diced |
2 cups | 474ml | Zucchini - sliced |
1/2 cup | 46g / 1.6oz | Red or yellow bell pepper - - minced |
1/2 teaspoon | 2.5ml | Oregano - minced |
1 tablespoon | 15ml | Basil - minced |
In a large skillet, over medium heat, heat the stock until it simmers. Add onion & saute for 3 minutes. Stir frequently. Add garlic, tomatoes, zucchini & pepper. Cover & cook until the zucchini is soft, 5 minutes. Add herbs: cook uncovered for 3 minutes.
Serve warm or cold with a good home-made bread for a lunch.
