Zucchini With Fresh Herbs

Recipe Ingredients

1/4 cup 59mlVegetable stock
1/3 cup 20g / 0.7ozRed onion - minced
3   Garlic cloves - minced
2 cups 125g / 4.4ozTomatoes - diced
2 cups 474mlZucchini - sliced
1/2 cup 46g / 1.6ozRed or yellow bell pepper - - minced
1/2 teaspoon 2.5mlOregano - minced
1 tablespoon 15mlBasil - minced

Recipe Instructions

In a large skillet, over medium heat, heat the stock until it simmers. Add onion & saute for 3 minutes. Stir frequently. Add garlic, tomatoes, zucchini & pepper. Cover & cook until the zucchini is soft, 5 minutes. Add herbs: cook uncovered for 3 minutes.

Serve warm or cold with a good home-made bread for a lunch.
