Zucchini Crispies Recipe - Cooking Index
1 tablespoon | 15ml | Mayonnaise or salad dressing |
1 tablespoon | 15ml | Finely chopped green onions |
1 1/2 teaspoons | 7.5ml | Dijon mustard |
1/8 teaspoon | 0.6ml | Dried marjoram |
1/8 teaspoon | 0.6ml | Dried thyme |
1 teaspoon | 5ml | Zucchini (medium) |
2 tablespoons | 30ml | Italian seasoned bread crumbs |
1/4 teaspoon | 1.3ml | Paprika |
Butter-flavored cooking spray |
Combine first 5 ingredients; set aside.
Cut zucchini crosswise into 12 slices; spread a small amount of mayonnaise mixture on 1 side of each slice.
Combine bread crumbs and paprika in a shallow dish; dredge mayonnaise coated side of zucchini slices in bread crumb mixture, and lightly coat with cooking spray. Place on a baking sheet coated with cooking spray.
Bake at 450F for 5 minutes or until lightly browned. Serve immediately. Makes 2 servings.
