Winter Fruit Couscous Recipe - Cooking Index
2 tablespoons | 30ml | Oil |
1/2 cup | 31g / 1.1oz | Onion - chopped |
1 1/2 cups | 240g / 8.5oz | Bulgur or brown rice - uncooked |
1 cup | 237ml | Apricots - dried |
1 cup | 146g / 5.1oz | Prunes - chopped |
1 cup | 146g / 5.1oz | Apples - dried, chopped |
4 cups | 948ml | Vegetable stock |
1/2 teaspoon | 2.5ml | Nutmeg - ground |
1/2 teaspoon | 2.5ml | Cinnamon - ground |
1/4 teaspoon | 1.3ml | Coriander - ground |
Heat oven to 350F. Heat oil in Dutch oven over medium heat.
Cook onion in oil about 2 minutes, stirring frequently, until tender.
Stir in bulgur. Cook about 5 minutes, stirring occasionally, or until bulgur is golden brown. Stir in remaining ingredients. Cover and bake 50 to 60 minutes or until bulgur is tender.
