Winter Fruit Couscous

Recipe Ingredients

2 tablespoons 30mlOil
1/2 cup 31g / 1.1ozOnion - chopped
1 1/2 cups 240g / 8.5ozBulgur or brown rice - uncooked
1 cup 237mlApricots - dried
1 cup 146g / 5.1ozPrunes - chopped
1 cup 146g / 5.1ozApples - dried, chopped
4 cups 948mlVegetable stock
1/2 teaspoon 2.5mlNutmeg - ground
1/2 teaspoon 2.5mlCinnamon - ground
1/4 teaspoon 1.3mlCoriander - ground

Recipe Instructions

Heat oven to 350F. Heat oil in Dutch oven over medium heat.

Cook onion in oil about 2 minutes, stirring frequently, until tender.

Stir in bulgur. Cook about 5 minutes, stirring occasionally, or until bulgur is golden brown. Stir in remaining ingredients. Cover and bake 50 to 60 minutes or until bulgur is tender.
