Sweet Garden Peas With Mint Recipe - Cooking Index
3 | Lettuce leaves - shredded (large) | |
2 tablespoons | 30ml | Scallions - minced |
1 teaspoon | 5ml | Butter |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
30 oz | 852g | Frozen tiny peas - thawed |
1/2 cup | 118ml | Water |
2 tablespoons | 30ml | Shredded fresh mint |
Place lettuce in a heavy medium pan. Add scallions, butter, salt, and pepper. Cover and cook on high until steam starts to rise. Add peas and water. Cover again, bring to a boil, then lower heat and simmer 10 to 15 minutes or until peas are tender but still retain their bright color. Stir in mint, cover, and steam 1 minute. Serve immediately.
