1/4 cup | 49g / 1.7oz | Butter |
1/2 cup | 73g / 2.6oz | Chopped scallions |
1 cup | 146g / 5.1oz | Red or green bell pepper - chopped (medium) |
10 oz | 284g | Frozen baby lima beans - thawed |
10 oz | 284g | Frozen corn kernels - thawed |
1/2 cup | 118ml | Water |
1/2 teaspoon | 2.5ml | Onion powder |
1/4 teaspoon | 1.3ml | Salt |
1/2 teaspoon | 2.5ml | Black pepper |
In a large skillet, melt the butter over medium heat. Saute the scallions and red pepper until soft, about 5 minutes. Reduce the heat to medium-low and add the remaining ingredients, stirring to blend. Cook for 15 to 20 minutes, or until the vegetables are tender and the liquid is absorbed.
