Squash - Broccoli Medley Recipe - Cooking Index
1/2 cup | 118ml | Mushrooms - sliced |
3/4 teaspoon | 3.8ml | Margarine |
3/4 cup | 109g / 3.8oz | Broccoli |
3/4 cup | 177ml | Yellow summer squash - sliced |
3/4 cup | 177ml | Zucchini - sliced |
1/8 teaspoon | 0.6ml | Salt |
1/8 teaspoon | 0.6ml | Pepper |
1/2 cup | 118ml | Water |
1/8 teaspoon | 0.6ml | Lemon rind - grated |
Cut broccoli in 1" pcs. Slice squash. Cook mushrooms in nonstick frying pan until lightly browned.
Add remaining ingredients except lemon rind.
Cover and boil gently until vegetables are tender, about 10 min. Drain.
Gently stir in lemon rind & serve.
