Spinach Radiatore Recipe - Cooking Index
4 cups | 948ml | Radiatore pasta [3/4lb] |
3 tablespoons | 45ml | Olive oil |
1 | Onion - chopped | |
2 | Garlic cloves - minced | |
1 teaspoon | 5ml | Dried thyme |
1 teaspoon | 5ml | Dried oregano |
10 oz | 284g | Fresh spinach - chopped |
1/4 cup | 59ml | Stock - vegetable or chicken |
1 teaspoon | 5ml | Lemon juice |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Pepper |
1/2 cup | 73g / 2.6oz | Light cottage cheese |
In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.
