4 | Baking potatoes [even sized] (medium) | |
1 teaspoon | 5ml | Seasoned salt |
3 tablespoons | 45ml | Butter [melted] |
3 tablespoons | 45ml | Herbs [chopped & fresh] ie - parsley, chives, thy |

3 tablespoons | 45ml | Dried herbs of your choice |
4 tablespoons | 60ml | Cheddar cheese [grated] |
1 1/2 tablespoons | 22ml | Parmesan cheese |
If the potato skins are tough, peel them otherwise just scrub and rinse them. Then cut them into thin slices being careful not to slice all of the way through. Put them in a baking dish, and fan them slightly.
Sprinkle with the salt, drizzle the butter on the tops, and then sprinkle your choice of herbs on the top. Bake in a 425F oven for 50 minutes then remove, and sprinkle with the cheeses. Return to the oven and bake for another 10 to 15 minutes until lightly browned, and cheeses are melted and potatoes are tender inside.
