Sliced Baked Potatoes From Fred Goslin

Recipe Ingredients

4   Baking potatoes [even sized] (medium)
1 teaspoon 5mlSeasoned salt
3 tablespoons 45mlButter [melted]
3 tablespoons 45mlHerbs [chopped & fresh] ie - parsley, chives, thy
  *or*
3 tablespoons 45mlDried herbs of your choice
4 tablespoons 60mlCheddar cheese [grated]
1 1/2 tablespoons 22mlParmesan cheese

Recipe Instructions

If the potato skins are tough, peel them otherwise just scrub and rinse them. Then cut them into thin slices being careful not to slice all of the way through. Put them in a baking dish, and fan them slightly.

Sprinkle with the salt, drizzle the butter on the tops, and then sprinkle your choice of herbs on the top. Bake in a 425F oven for 50 minutes then remove, and sprinkle with the cheeses. Return to the oven and bake for another 10 to 15 minutes until lightly browned, and cheeses are melted and potatoes are tender inside.
