Shredded Carrots A L'orange Recipe - Cooking Index
1 lb | 454g / 16oz | Fresh carrots - unpared, shredded |
3 tablespoons | 45ml | Orange juice concentrate - frozen, undiluted |
1/4 cup | 59ml | Water |
1/4 cup | 40g / 1.4oz | Raisins |
1 | Ground cinnamon | |
Salt and pepper to taste |
In a large non-stick saucepan or skillet with a lid, combine shredded carrots with remaining ingredients. Simmer, covered, 3 minutes.
Uncover and simmer an additional 2 to 3 minutes, until nearly all the liquid is evaporated. Makes 5 servings, about 70 calories each.
