Sausage N' Sauerkraut Recipe - Cooking Index
| 1 lb | 454g / 16oz | Fresh polish sausage - or bratwurst, up to 2 |
| 1 | Sauerkraut - rinsed and drained | |
| 1 | Tomatoes with liquid - cut up | |
| 1 cup | 110g / 3.9oz | Chopped celery |
| 1 cup | 62g / 2.2oz | Onion - chopped (large) |
| 1 cup | 146g / 5.1oz | Green pepper - chopped (large) |
| 3 tablespoons | 45ml | Brown sugar |
| 1 | Bay leaf | |
| 1 teaspoon | 5ml | Dried oregano |
| 1/2 teaspoon | 2.5ml | Salt |
| 1/4 teaspoon | 1.3ml | Pepper |
| Mashed potatoes - optional |
Cut the sausage into 1" slices. Saute in a Dutch oven until fully cooked and browned. Drain. Add sauerkraut, tomatoes with liquid, celery, onion, green pepper, brown sugar and seasonings.
Mix well. Cover and simmer for 20-25 minutes. or until vegetables are tender. Remove bay leaf. Serve over mashed potatoes, if desired.
