Roasted Red Potatoes With Garlic And Rosemary Recipe - Cooking Index

3 tablespoons | 45ml | Olive oil |
Fresh rosemary - stripped from the st | ||
Salt & pepper to taste |
Preheat oven to 400F. Wash and dry red potatoes (leaving skins on). Cut into quarters and place on cookie sheet. Peel garlic cloves and slice into pieces about the size of slivered almonds. Toss potatoes with olive oil, garlic pieces, rosemary and salt & pepper. Bake in oven about 30 minutes, turning as necessary to brown evenly.
Serve immediately. (Note that garlic will get very black in this process, but it's delicious! If you like your garlic less done, add it about halfway through the cooking.)
