Red Cabbage & Apples Recipe - Cooking Index
2 lbs | 908g / 32oz | Red cabbage - finely shredded |
8 | Juniper berries - crushed | |
1/4 | Boiling water | |
1 teaspoon | 5ml | Salt |
8 oz | 227g | Onions - chopped |
8 oz | 227g | Apples - chopped |
2 oz | 56g | Soft brown sugar |
1 teaspoon | 5ml | Caraway seeds |
1 | Bouquet garni | |
1 tablespoon | 15ml | Cornstarch |
3 tablespoons | 45ml | Malt vinegar |
1 tablespoon | 15ml | Cold water |
Place red cabbage, junipers, 1/4 c boiling water & salt in a large pot. Bring to the boil, cover & simmer for 30 minutes. Stir in remaining water, onions, apples, sugar, caraway seeds & bouquet garni. Cover & cook gently for 1 1/2 hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar & cold water till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
Stir often to prevent sticking.
