Hearty Alaska Cod Chowder

Recipe Ingredients

1 1/2 lbs 681g / 24ozCod fillets - thawed if necessary
1 cup 62g / 2.2ozChopped onion
1 cup 146g / 5.1ozChopped zucchini
1 cup 93g / 3.3ozGarlic clove - minced (large)
1/4 cup 59mlOil
1   Tomatoes - (14 1/2 to 16 oz)
2 cups 474mlTomato juice
1/3 cup 78mlDry white wine or water
3/4 teaspoon 3.8mlSalt
3/4 teaspoon 3.8mlBasil - crushed
1   Bottled hot pepper sauce - (generous)

Recipe Instructions

Cut cod into large chunks. Saute onion, zuccini and garlic in oil. Add tomatoes, tomato juice, wine and seasonings. Heat to boiling. Add cod; simmer, covered, about 10 minutes or until cod flakes easily when tested with a fork.

This recipe yields 6 servings. Recipe may be halved.
