Pesach Spinach Kugel Recipe - Cooking Index
2 | Frozen chopped spinach | |
1 cup | 237ml | White cheese - 1/2% fat, or yogurt |
2 cups | 292g / 10oz | Cottage cheese - lowfat |
4 | Eggs - or 6 whites,beaten | |
1 cup | 237ml | Matzo meal |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Nutmeg - optional |
1/8 teaspoon | 0.6ml | Pepper |
1 1/2 tablespoons | 22ml | Lemon juice |
Defrost spinach. Add white cheese or yogurt and stir. Add the rest, reserving 1/2 cup matzo meal. Spread in greased 9"x13" pan.
Sprinkle with remaining matzo meal. Cover and bake 35 min. at 375F. Uncover and bake 10 min. longer.
