Nutty Bean-Rice Burgers

Recipe Ingredients

2 tablespoons 30mlSliced green onion
1/4 cup 27g / 1ozFinely diced celery
2 tablespoons 30mlButter or margarine
1 cup 237mlCooked soy or other - dry bea
1 cup 160g / 5.6ozCooked brown rice
1 cup 110g / 3.9ozSunflower seeds - ground
1/2 cup 73g / 2.6ozShredded cheddar cheese
1/4 cup 15g / 0.5ozWhole wheat flour
2 teaspoons 10mlSweet pickle relish
2 tablespoons 30mlCatsup
2 teaspoons 10mlSoy sauce
1/2 teaspoon 2.5mlDried basil leaves - crumbled
2   Eggs - slightly beaten
1/8 teaspoon 0.6mlBlack pepper
  Salt to taste

Recipe Instructions

Saute onions and celery in 1 Tbsp. of the butter for 2 to 3 minutes.

Add to beans, rice, sunflower seeds, cheese, flour, pickle relish, catsup, soy sauce, basil, eggs, and black pepper. Mix well. Add salt to taste. Shape in 8 patties about 1/2" thick. Heat remaining butter in a large skillet. Add patties. Cook slowly, turning once, until well browned, about 15 minutes. Transfer to serving platter. Garnish with onion rings, and pickle slices. Serve with chili sauce, if desired.
