Nutty Baked Acorn Squash Recipe - Cooking Index
Here is a delicious and simple way to serve this nutritious vegetable without drowning it in butter and brown sugar.
Type: Vegetables2 oz | 56g | Acorn squash (medium) |
1/2 cup | 73g / 2.6oz | Unsweetened crushed pineapple - undrained |
1/3 cup | 48g / 1.7oz | Chopped pecans |
1/3 cup | 48g / 1.7oz | Chopped pitted dates |
1 tablespoon | 15ml | Honey |
1 teaspoon | 5ml | Ground coriander |
1/2 teaspoon | 2.5ml | Salt |
Preheat the oven to 400F.
Wash squash and cut in half. Remove seeds and fibers and place cavity side up in an ungreased baking dish.
Thoroughly combine remaining ingredients. Divide the mixture evenly among the squash halves.
Pour water into dish to depth of 1/4-inch. Cover and bake for 30 minutes or until tender. This recipe serves 4.
