Nutty Baked Acorn Squash

Here is a delicious and simple way to serve this nutritious vegetable without drowning it in butter and brown sugar.

Recipe Ingredients

2 oz 56gAcorn squash (medium)
1/2 cup 73g / 2.6ozUnsweetened crushed pineapple - undrained
1/3 cup 48g / 1.7ozChopped pecans
1/3 cup 48g / 1.7ozChopped pitted dates
1 tablespoon 15mlHoney
1 teaspoon 5mlGround coriander
1/2 teaspoon 2.5mlSalt

Recipe Instructions

Preheat the oven to 400F.

Wash squash and cut in half. Remove seeds and fibers and place cavity side up in an ungreased baking dish.

Thoroughly combine remaining ingredients. Divide the mixture evenly among the squash halves.

Pour water into dish to depth of 1/4-inch. Cover and bake for 30 minutes or until tender. This recipe serves 4.
