In a large sauce pan, boil potatoes covered with water for about 30 minutes. When potatoes are tender, place in a large bowl and beat with a mixer until smooth, about five minutes. Use for 'rich duchess potatoes' or as ' potato lattice over potpies or stews', recipes in database.
