Molasses Rice Pudding Recipe - Cooking Index
4 | Egg whites - beaten | |
1 1/2 cups | 355ml | Skim milk |
1 1/4 cups | 200g / 7.1oz | Brown rice - cooked, cooked |
1 cup | 160g / 5.6oz | Raisins |
1/4 cup | 59ml | Molasses |
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Vanilla |
1/4 teaspoon | 1.3ml | Cinnamon |
1/2 teaspoon | 2.5ml | Nutmeg |
Preheat oven to 350F.
In a medium bowl, add milk and egg whites and mix well. Add all the other ingredients, mix well. Place in a medium baking dish. Cover and bake for 1 hour or until the mixture is firm. Serve warm or chilled, topped with whipped cream if desired.
(note: This recipe will probably work better if you add uncooked rice and increased the milk somewhat. Keep that in mind..)
