Mideastern Cashew Pitas Recipe - Cooking Index
1/2 cup | 118ml | Plain yogurt |
2 teaspoons | 10ml | To 3 tsp. Snipped fresh |
Cilantro or parsley | ||
1 | Curry powder | |
1/2 cup | 118ml | Dry roasted cashews |
1/2 cup | 73g / 2.6oz | Chopped cucumber |
1/2 cup | 73g / 2.6oz | Chopped red and-or green |
Sweet pepper | ||
1/4 cup | 15g / 0.5oz | Chopped red onion |
2 | Pita rounds - split crosswise |
In a medium mixing bowl stir together yogurt, cilantro or parsley, and curry powder. Stir in cashews, cucumber, sweet pepper and red onion. Spoon evenly into split pita rounds.
