Marinated Cucumber Recipe - Cooking Index
| 2 | Cucumbers - large, up to 3 | |
| 1 teaspoon | 5ml | Salt |
| 1 teaspoon | 5ml | Sugar replacement |
| 1/4 cup | 59ml | Vinegar |
| 1/8 teaspoon | 0.6ml | Fresh ground pepper |
| ( i also add a little fresh | ||
| Garlic to this) |
Score cucumbers with tines of fork. Cut into very thin slices.
Sprinkle with salt. Chill 2 hours; drain well. Sprinkle with sugar replacement; add vinegar and pepper. Marinate 30 minutes or more before serving.
