Kalagoora Pulusu (Mixed Vegetables With Fenugreek

Recipe Ingredients

3 cups 330g / 11ozMixed vegetables* - (sweet potatoes,
  Eggplant bell pepper, onions, potatoes, green beans, tomatoes)
2 tablespoons 30mlTamarind extract
1 teaspoon 5mlFenugreek seeds
1/4 teaspoon 1.3mlMustard seeds
1/2 cup 118mlOil
1/2 teaspoon 2.5mlTurmeric powder
1 teaspoon 5mlRed chile powder
1 teaspoon 5mlSugar
10   Curry leaves
3 cups 711mlWater
  Coriander leaves - to garnish
  Salt - to taste

Recipe Instructions

* cut into 2 inch pieces

In a deep skillet, heat oil on medium and add mustard seeds and Fenugreek seeds. When Fenugreek seeds are light brown, add chopped onion and fry until light brown.

Now add vegetable pieces, salt, turmeric powder, red chile powder and fry for 5 minutes on high heat while stirring occasionally.

Next add tamarind extract, coriander leaves, curry leaves, sugar, water and stir well. Cook on medium heat for 20 minutes such that the sauce is not too watery or too thick.
