Green Olive-Cucumber Salad Recipe - Cooking Index
1 | Lime-flavored gelatin - 3oz. | |
1 cup | 237ml | Water - hot |
1/2 cup | 118ml | Water - cold |
1 teaspoon | 5ml | Lemon juice |
1 teaspoon | 5ml | Lemon rind - grated |
1 teaspoon | 5ml | Onion - grated |
1/2 teaspoon | 2.5ml | Salt |
1 teaspoon | 5ml | Cucumber - peeled and chopped (medium) |
1/3 cup | 20g / 0.7oz | Green olives - onion-stuffed |
Dissolve gelatin in hot water. Add cold water, lemon juice, lemon rind, onion, and salt. Chill until slighlty thickened. Fold in cucumber and olives. Pour into a 1-quart mold and chill until firm.
