Reuben Bites Recipe - Cooking Index
Your Super Bowl guests will adore these tasty appetizers. They're usually loaded with butter. But we trimmed them down to a fraction of the fat and calories, and kept all the taste.

1/4 cup | 59ml | Diet Thousand Island salad dressing |
8 oz | 227g | Low-fat hard Swiss cheese - cut into 24 pieces |
1/4 lb | 113g / 4oz | Cooked lean corned beef brisket - cut into 24 pieces |
1 cup | 237ml | Sauerkraut - drained |
Preheat oven to 350 degrees. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat each piece with cooking spray.
Spread 1/2 teaspoon Thousand Island dressing on each piece of bread. Layer with 1 piece each, Swiss cheese and corned beef, and 2 teaspoons sauerkraut.
Bake for 15 minutes. Serve immediately.
This recipe yields 24 servings; one reuben bite per serving.
