Ginger-Glazed Carrots

Recipe Ingredients

8 teaspoons 40mlCarrots - cut into 1/4 inch (medium) slices, (4 cups)
1/2 cup 118mlWater
1/2 cup 118mlDry white wine or apple juice
2 teaspoons 10mlMargarine
1 teaspoon 5mlGround ginger
1 tablespoon 15mlLemon juice
2 teaspoons 10mlPacked brown sugar

Recipe Instructions

Cook all ingredients except lemon juice and brown sugar in 10 inch skillet over medium heat 12 to 15 minutes, stirring occasionally, until liquid has evaporated. Reduce to medium-low.

Stir in lemon juice and brown sugar. Cook 5 minutes, stirring occasionally, until carrots are glazed.

Makes 6 servings.
