Fruited Rice W/ Mushrooms & Almonds

Recipe Ingredients

2 cups 320g / 11ozBasmati rice uncooked
1/2 cup 73g / 2.6ozDiced dried apples
1/2 cup 73g / 2.6ozDiced dried apricots
1/2 cup 73g / 2.6ozDried dates chopped
1/2 cup 80g / 2.8ozRaisins
1/2 cup 73g / 2.6ozPrunes pitted and chopped
1/2 cup 46g / 1.6ozSlivered almonds
1 cup 237mlMushrooms fresh sliced
1 teaspoon 5mlSalt
1 teaspoon 5mlCinnamon ground
  Water as needed for rice

Recipe Instructions

Put water into a large pot and bring to a boil. Add rice, stir, and reduce heat. Add the fruits & salt. cook for 15 minutes on Medium heat. Add remaining ingredients, stir, cover and continue for balance of cooking time. Stir as needed. Note: This dish may be served as a meatless main dish or as a side dish for poultry, fish, or beef. It is especially good with veal.
