Eggplant Croquettes Recipe - Cooking Index
2 | Eggplants - peeled & cubed | |
2 tablespoons | 30ml | Onion |
1 cup | 146g / 5.1oz | Sharp cheese - grated |
1 | Garlic - minced | |
1 cup | 146g / 5.1oz | Bread crumbs - seasoned |
1 cup | 237ml | Corn oil |
2 | Eggs | |
1 teaspoon | 5ml | Salt |
2 tablespoons | 30ml | Parsley - fresh, chopped |
1/2 teaspoon | 2.5ml | Pepper |
In covered saucepan, cook eggplant in a small amount of boiling water until tender, about 4-5 mins. Drain & mash. Stir in remaining ingredients except oil. Shape into patties. Fry in hot oil until golden brown, about 5 mins on each side. Mrs. Robert F. Lewis
