Cucumber, Tomato, Scallion, & Yogurt Relish Recipe - Cooking Index
1 | Cucumber (medium) | |
1 cup | 237ml | Yogurt |
1 teaspoon | 5ml | Sugar |
1/4 cup | 36g / 1.3oz | Chopped scallions |
1/4 teaspoon | 1.3ml | Cumin |
1/2 cup | 31g / 1.1oz | Peeled - seeded, cubed tomato |
1. Peel cucumber. Cut lengthwise in half and scrape out center seeds
2. Cut cucumber into 1 1/2 inch lengths. Cut into coarse shreds with a hand grater or food processor. There should be about 1 1/2 cups.
3. Combine yogurt, cucumber and remaining ingredients. Refrigerate and allow flavors to blend for an hour or more before serving.
