Crunchy Zucchini And Tomatoes Recipe - Cooking Index
3 cups | 711ml | Zucchini - unpared, cut (small) diagona |
1 tablespoon | 15ml | Margarine |
2 tablespoons | 30ml | Onion - finely chopped |
1/2 | Garlic - finely chopped | |
1 cup | 62g / 2.2oz | Cherry tomatoes - halved |
Salt and pepper | ||
1 tablespoon | 15ml | Sesame seeds |
2 tablespoons | 30ml | Parsley - finely chopped |
Blanch zucchini with boiling water for 1 minute; drain. Melt margarine; add onion and garlic. Saute on medium heat. Heat 1 minute. Add zucchini; cook, covered 2 minutes. Add tomatoes; cook, covered, 30 seconds. Season with salt and pepper. Add sesame seeds and parsley. Toss gently.
