Chili Non Carne

Recipe Ingredients

3/4 cup 46g / 1.6ozChopped onion
2   Garlic
3 tablespoons 45mlOlive oil
2 tablespoons 30mlChili powder
1/4 teaspoon 1.3mlBasil
1/4 teaspoon 1.3mlOregano
1/4 teaspoon 1.3mlCumin
2 cups 292g / 10ozFinely chopped zucchini
1 cup 110g / 3.9ozFinely chopped carrot
1   Tomatoes - drain & chop
1   Tomatoes - drain & chop
15 oz 426gCan-kidney beans - undrained
30 oz 852gCan-kidney beans - drained
  And thoroughly rinsed
  Chopped onions - tomatoes
  Lettuce - or green peppers
  For garnish

Recipe Instructions

1. In a large pot, saute onion and garlic in olive oil until soft. Mix in chili powder, basil, oregano, and cumin.

2. Stir in zucchini and carrots until well blended. Cook for about 1 minute over low heat, stirring occasionally.

3. Stir in chopped tomatoes, undrained kidney beans, and drained kidney beans.

4. Bring to a boil. Reduce heat and simmer for 30-45 minutes or until thick. Top with chopped onions, tomatoes, and lettuce or green peppers.

Makes 8 one cup servings @ 157 calories per serving.
