Cheesy Rice Cake Nachos Recipe - Cooking Index
Superfast and oh-so-good, this simple snack will become a family favorite. Mix it up a bit with different flavored salsas and a variety of rice cake flavors.

2/3 cup | 157ml | Medium or hot salsa - well-drained |
3 tablespoons | 45ml | Chopped canned jalapeño peppers - or to taste |
1/2 cup | 73g / 2.6oz | Low-fat shredded cheddar cheese |
1/4 cup | 59ml | Guacamole |
3 tablespoons | 45ml | Reduced-fat sour cream |
Preheat oven or toaster oven to 400 degrees. Arrange rice cakes close together on a baking sheet.
Spoon well-drained salsa over rice cakes. Sprinkle with jalapeño and cheese.
Bake until cheese is melted and nachos are heated through, about 10 minutes. Spoon guacamole and sour cream over nachos. Serve warm.
This recipe yields 4 servings; 6 nachos per serving.
