Cauliflower And Peppers

Recipe Ingredients

4   Banana peppers (large)
1   Cauliflower - cut into flowerets
2 cups 292g / 10ozMonterey jack cheese - shredded
1 cup 146g / 5.1ozRed pepper - chopped (medium)
1 1/2 cups 355mlMilk
1/4 cup 15g / 0.5ozAll-purpose flour
2   Eggs - beaten

Recipe Instructions

Cut banana peppers in half lengthwise. Place on bottom of a lightly greased 10x6x2 inch baking dish. Set aside for now. Steam cauliflower for 8-10 minutes until crisp, but tender. Drain.

Place cauliflower on banana peppers and sprinkle with cheese and red peppers. Combine flour and 1/2 cup of milk, stirring until smooth. Add remaining milk and eggs, stirring well. Pour this over entire dish. Bake at 350 for 35 minutes.
