Shiitake Truffle Flan

Recipe Ingredients

4   Eggs
1 cup 237mlHeavy cream
1 1/2 cups 355mlSauteed shiitake mushrooms - sauteed with
1 teaspoon 5mlMinced shallots
2 tablespoons 30mlSliced green scallions
1 tablespoon 15mlWhite truffle oil
  Salt - to taste
  Freshly-ground white pepper - to taste

Recipe Instructions

Mix everything in large bowl. Spray 4 ramekins with pan release and fill 4/5 full. Place in hot bain marie (water up half way) and bake in oven at 300 degrees for 25 minutes or until flans are set.

This recipe yields 4 servings.
