Cucumber Mirin Salad Recipe - Cooking Index
1/4 cup | 59ml | Mirin |
1 tablespoon | 15ml | Rice wine vinegar |
1/2 teaspoon | 2.5ml | Sesame oil |
1 tablespoon | 15ml | Pickled ginger (gari) - julienned |
1 tablespoon | 15ml | Finely-sliced scallions |
2 tablespoons | 30ml | English cucumbers - thinly sliced, (medium) |
(if using regular cucumbers peel and seed) |
In a bowl, whisk together the mirin, vinegar, oil, pickled ginger, and scallions. Toss the cucumbers in the dressing about 15 minutes before serving.
