Tomato Relish Recipe - Cooking Index
4 | Tomatoes - peeled, seeded, | |
And finely chopped | ||
1 | Red bell pepper - seeded, chopped fine | |
1 | Onion - finely chopped (small) | |
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Red wine vinegar |
1 teaspoon | 5ml | Dried mint |
1 teaspoon | 5ml | Paprika |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Combine all the ingredients in a bowl and mix well. Taste for seasoning. Set aside at room temperature for a few hours, or cover and chill for several days.
