Herring Sandwiches Recipe - Cooking Index
3/4 lb | 340g / 11oz | Thin pickled herring fillets - cut into 1/2" pieces |
1 lb | 454g / 16oz | Potato - peeled, boiled, (small) |
And cut into 1/4" cubes | ||
1/4 cup | 15g / 0.5oz | Finely-chopped onion |
2 tablespoons | 30ml | Finely-chopped dill pickle |
1 tablespoon | 15ml | Apple - peeled, cored, (small) |
And cut into 1/4" cubes | ||
2 tablespoons | 30ml | Mayonnaise |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/2 | Butter - room temperature | |
6 | Black bread, thin - halved | |
Green leaf lettuce |
Place herring pieces, potato, onion, pickle, apple and mayonnaise in a bowl and mix to combine. Add mayonnaise and mix well. Season to taste with salt and pepper.
Spread about 1 teaspoon of butter on each bread half. Top with a lettuce leaf, then with the herring mixture.
This recipe yields 4 to 6 servings.
