Recipe Ingredients

1/2 cup 55g / 1.9ozWhite sesame seeds
1/2 cup 118mlBasic Dashi - (to 1 cup) - see * Note
1/4 cup 59mlDark soy sauce - (to 1/2 cup)
2 tablespoons 30mlMirin
1 tablespoon 15mlSugar
1 tablespoon 15mlSake
  Cayenne pepper - to taste

Recipe Instructions

* Note: See the "Basic Dashi" recipe which is included in this collection

Toast the sesame seeds in a heavy pan until lightly browned. Transfer warm seeds to a mortar and grind to a paste, or whirl in a blender. Add the Basic Dashi, soy sauce, mirin, sugar and sake, and mix well, using a spatula to blend and smooth the sauce. Add cayenne to taste.
