Papas Con Crema Verde

Recipe Ingredients

  Hot, boiled and skinned, potatoes
1   Cilantro, stems included
6   Yellow chiles - seeded (small)
1   Pale green (Hungarian) chile - seeded (large)
1   Green onions, white and green parts
1 cup 237mlMexican Crema - see * Note
1/2 cup 118mlOlive oil
  Juice of 1 lime

Recipe Instructions

* Note: See the "Crema" recipe which is included in this collection.

Place all of the above ingredients, except potatoes, in a blender. Blend until very smooth.

Use as a sauce over the very hot, boiled, and skinned potatoes.

This recipe yields about 2 1/2 cups of sauce for ?? side dish servings.
