Mashed Sweet Potatoes And Carrots Recipe - Cooking Index
2 cups | 474ml | Sweet potatoes - peeled, cubed (large) |
4 cups | 440g / 15oz | Carrots - peeled, sliced (large) |
2 | Garlic cloves - peeled | |
1/4 cup | 59ml | Whipping cream |
2 tablespoons | 30ml | Butter |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Cook potatoes, carrots and garlic in large pot of boiling salted water until very tender. Drain; return to same pot. Mash with potato masher. Add cream and butter and mash until smooth and creamy. Season to taste with salt and pepper.
This recipe yields 6 servings.
