Limeade Gel Recipe - Cooking Index
These citrus gels need extra gelatin to compensate for their acidity, which weakens setting.
Courses: Dessert| 3/4 cup | 148g / 5.2oz | Sugar |
| 2 cups | 474ml | Cold water |
| 2 | Unflavored gelatin | |
| 1/2 cup | 118ml | Lime juice |
| 2 | Green food coloring - if desired |
Stir together sugar and 1 cup water in small saucepan. Heat over medium flame and simmer until the sugar is well dissolved. Sprinkle gelatin over, stir, let sit 2 minutes, and stir again. Add lime juice and cold water, and food coloring if using, stir, and pour into an 8- by 8-inch pan. Refrigerate until firm, 4 to 6 hours, and cut into cubes.
