Cucumber And Bread Salad

Recipe Ingredients

1 1/2   Bolillos
  (or 1/4 loaf crusty Italian bread
6   Pickling cucumbers - peeled, cut into 3/4" chunks
1   Red onion - thinly sliced (small)
3   Italian Roma tomatoes - chopped
1/2 cup 118mlGreen olives - pitted, halved
6 oz 170gPanela cheese - cut into 1/2" cubes
1/4 cup 59mlRed wine vinegar
1/4 cup 59mlOlive oil
1/2   Cilantro - chopped
3/4 teaspoon 3.8mlSalt
1/2 teaspoon 2.5mlCracked black pepper
  Lettuce leaves - for serving

Recipe Instructions

Cut the bread, with crusts, into 1/2-inch cubes. Spread on a tray to thoroughly dry, 1 to 2 hours, or dry in a 250 degree oven for 30 to 45 minutes.

Mix the cucumbers, onion, tomatoes, olives and cheese together in a bowl. Add the remaining ingredients and the bread cubes. Toss well, cover and chill 30 minutes. Serve cold on lettuce-lined plates.

This recipe yields 4 to 6 servings.
